I’ve been attempting to clear out my freezer for a couple of weeks now, due to the urgent need to defrost it.
This is problematic because I live on my own – so I have a tendency to cook in bulk from scratch to keep costs down, which then just fills up the freezer with lots of delicious food that I can reheat at my leisure. The problem with this is that unless you can jig things around carefully in regards to use-by dates, how much you can eat, and how much storage space you have, you constantly need that freezer space unless you want to be eating the same meal every night of the week. Since I’ve been with the bloke, getting through the food is becoming easier because his portions are about three times the size of mine. However, some of the portion sizes in there are me-sized, and not enough to make a meal for two.
I have had a cooking spree to try to address the issue of some of the uncooked ingredients I had.
2 leek, mushroom and chicken pies, 2 cottage pies, a treacle tart (made spur of the moment as I had left over pastry), and two tubs of bolognaise later, my freezer is now slightly more full than before. Damn you, treacle tart!
I’m pleased with my efforts though. I don’t make the prettiest pies, but darn, are they tasty. Looks like I’ll have another couple of weeks until my freezer is empty enough to defrost though.
